Tasting Notes 

Aromas of tropical fruits and caramel. Flavours of pineapple upside-down cake, golden crush cordial, and an aftertaste of black sapote chocolate pudding fruit. Lovely citric acidity with a round and full body.

Process: The coffee cherries undergo a process called Thermal Shock, where they are exposed to 80 degrees Celsius water for 20 seconds, followed by immersion in 15 degrees Celsius water for 3 minutes. After this, the coffee cherries are pulped and placed in sealed containers for 120 hours along with a culture made from beer yeast and coffee cherries. Following this fermentation period, the beans are sun-dried for 21 days.

About The Coffee

Oscar Hernández comes from a long line of coffee farmers, with his grandfather, Ricardo, being among Colombia's pioneering specialty coffee producers, acquiring the Los Nogales farm in 1953. Oscar's father, Ricaurte, made significant strides in the industry, clinching the inaugural Cup of Excellence title in Colombia in 2005 and later demonstrating the viability of sustainable coffee farming by selling his specialty beans to Maruyama Coffee, a renowned Japanese roaster.

Tragically, Ricaurte's life was cut short eight years later when he bravely defended his crop against guerrilla thieves. At just 25 years old and six years into his army career, Oscar found himself thrust into the role of farm manager. Setting aside aspirations of a military career, he embraced his familial responsibilities, drawing on the knowledge imparted by his father during his formative years on the farm.

Over the ensuing eight years, Oscar has made remarkable progress, transforming Los Nogales into a beacon of excellence in coffee production. At only 34 years old, he exemplifies dedication to quality and sustainability, ensuring the farm's longevity for future generations while prioritizing the welfare of his workers and embracing environmentally friendly practices.As the face of Los Nogales Farm, Oscar embodies its ethos of innovation and stewardship. His dynamic leadership has not only upheld his family's legacy but also elevated Bruselas, and by extension, the entire Huila region, as a premier destination for exceptional coffee. Through his forward-thinking approach, Oscar has positioned Los Nogales as a hub of knowledge and progress, inspiring fellow farmers in the area to strive for excellence.
