Process information

Process: Anaerobic Natural (often with thermal-shock style fermentation control, depending on the lot). Ripe cherry is carefully selected, fermented in controlled low-oxygen conditions to build intense fruit sweetness, then slow-dried to stabilise the profile and keep the finish clean.

Region: Huila, Pitalito (Bruselas area), Colombia.

Variety: Ombligón (rare Colombian exotic variety).
