Flavour: Peach and apricot up front, then lime and green apple brightness, finishing with a crisp herbal-citrus sparkle (signature Ají character).

Sweetness: Refined fruit-candy sweetness that lingers.

Acidity: Sparkling, citrus-driven acidity — lively but polished.

Washed. Selective picking, depulped and fermented to remove mucilage, then fully washed and slow-dried for maximum clarity, lift, and a clean finish. (Many El Diviso Ají lots are “extended/mosto-washed” style — still washed, just with extra fermentation control.)
